    Baking again already. Going to try lining the banneton with a floured tea towel for this one and retard in the fridge again. Bake either late tonight or first thing tomorrow. #sourdough

    Crumb shot of the #sourdough loaf I baked yesterday. Very tasty, this one. Think the overnight retarding in the fridge helped.

    Yeah, basically means slowing down the fermentation while it proves by putting it somewhere cold.

    Thanks! Obviously had a good teacher. Just want to get really good at this one recipe and develop a feel for the various stages before I branch out.

    Yes, was given some mother by @brickhousebread which helped speed things along very well. And yes, I use a Dutch oven. You're welcome to some of my mother if you're ever close by.

    Did you get given a mother at the course you went on or make one yourself? So want to start sourdough baking. Do you use an cast iron lidded pot to bake in?
