These don’t look like anything fancy, but are surprisingly flavorful — something my tiny dictator insists upon. On the left, a small amount of ground buffalo sautéed with shallot, mushrooms, lentils, zucchini, cabbage, and carrot, spiced with turmeric, paprika & cumin. All about that one-skillet-meal. Had a little help from @sunbasket on this one. I feel like they just get the way I like to shop & cook: simple, colorful, high-quality ingredients combined to form veggie-packed, flavorful but unfussy meals. #momlunch - leftovers all the way, baby. No plate required. Pro-tip: when you make salad with dark leafy greens (in this case, beet greens), it's just as tasty (#notsoggy) the next day. For this "clean out the fridge" salad I mandolined chiogga beet, celery root, and apple, and tossed with a maple & mustard vinaigrette, beet greens, arugula, leftover quinoa that I crisped under the broiler, toasted hazelnuts and some manchego cheese. Oh, okay...I also crumbled in some nitrate-free applewood smoked bacon; totally unnecessary but I had 2 random slices in there, so...#leftoverlunch#salad#eatarainbow#beetgreens#glutenfree#betterwithbacon

Veggies drizzled with lime & olive oil, smoky salsa, and some #vegan#glutenfree pinto bean & kale papusas from #trespapusas that we had in the freezer (I call these my "parachute foods" -- healthy prepared options that I keep in my freezer or pantry for those days when time is short & the fridge isn't full of leftovers.)
