    Spelt-Rye Sourdough. All of the spelt bread I've made so far has had somewhat dense crumb until this one. πŸ’ƒπŸ»πŸ’ƒπŸ»πŸ’ƒπŸ» About time, I guess πŸ˜„.

    @asparaguskurus partly it's practice, I think. Have you tried baking with spelt? It makes the dough very elastic but very very sticky, and the stickiness used to send me into total panic πŸ˜„. This is my 4th or 5th spelt bread, and the difference between #1 and now is: this mix has whole wheat flour added, higher hydration, longer autolyse, shorter fridge proof, slap & fold during mixing (before adding salt) and very very very gentle stretch and fold + shaping. So, as you see, lots have changed πŸ˜….
