"It's a braii, it's not a barbecue". While touring through South Africa’s many pocketed wine regions recently, had the chance to experience a proper SA Braai. This was one of the best year’s best meals. An outdoor cookout where a variety of meats are prepared over an open flame. Something that seems fairly simple but is in South Africa its an obsession, a fine craft tradition. Borewors, kebabs, springbok, chicken, lamb ribs and of course skilpadjies (lamb's liver wrapped in colfat). // 🎼 The Dead South - In Hell I'll Be In Good Company.
From a recent private dinner at @bucatoronto. A sneak peek of what I hope is a new collaborative dinner series between @charliesburgers and @rob_gentile. An exploration of regional Italian pastas from north to south..including the acclaimed su filindeu, pasta made from stretching semolina until its hair thin and weaving it over a basket before cracking. Seven courses of incredibly well constructed pasta dishes; stuffed ricotta gnocchi, Maccheroncini di Campofilone, Scialatielli, Orecchiette di Grano Arso, Gargati al torchio, and the Buca classic spaghetti al nero di maiale made with pork blood. #Toronto // William Onyeabor - Fantastic man
In #Bari's "refugee quarter" I came across many shops and personalities. People from various corners of the globe that have recently moved to Italy, trying to start a new life. Particularly striking to me was this naan shop which opened two months ago, by an Iraqi. He used to be a police officer, moved to Bari and decided he wanted to open a food shop. In his words "I wanted to open a business but at the same time give back to the refugee community here. We are a very community, everyone gets along". He sponsored a friend from Kurdistan who had a knack for creating Kurdistan-style naan, very similar to Indian #naan. The #bakery has quickly become a hit with the community, they make 800-1000 loaves of bread a day to try and keep up. The sesame seed naan was excellent. #Italy // 🎼 Grammatik - Just Jammin'
My favourite city so far on this cross-country tour of Italy. The coastal, multicultural town of #Bari. Managed to score a food tour with Augusto Solomone @ad_pugliam, we had breakfast at the seaside fish market. The daily market by the Adriatic coast is known for fresh fish and the centuries-long tradition of eating raw seafood. One of the few places in Italy where you can go to the market and have a fisherman prepare a #raw plate of the day's catch. #Octopus, limona di mare, sea urchin, oysters, cuttlefish, shrimp. The most popular item is the octopus -- tenderized by the fisherman using a four-step process; beating it against the rocks, hitting it repeatedly with a flat piece of wood, removing the film, and then shaking the octopus in a wicker basket which curls the octopus and gives it a noticeable crunchy exterior. #puglia#italy // 🎼 Manu Chao - Bongo Bongo
There's a new #icecream shop that you should check out in East Chinatown, @wongsicecream. No frills, no crazy stacked doughnuts and over-the-top milkshakes, just interesting Asian flavors; Vietnamese coffee, wasabi honey, and the savoury and sweet salted duck egg with black sesame (unreal). Also, a bonus, its now home to @titorons pies and ube sundae. #Toronto // 🎼Zhu - Faded (Odesza remix)
Recently had the chance to experience the Rijsttafel menu at @noordento. A special Dutch-Indo interpretation of West Sumatran Nasi Padang, where an assortment of dishes are served with rice. Only one restaurant in Toronto does Rijsttafel like this -- rendang beef, sea bream with sambal, an assortment of pickles and wickedly good satay. The owners used to serve it at their previous restaurant -- Quince -- as a special popup dinner which would often get booked up in minutes. With their Dutch-Indo bar Noorden, they've decided to put it on the menu as a specialty item that needs to be ordered in advance. There were many memorable meals in #Jamaica. It's tough to pick one favourite, so I'll share four. Lunch at Miss T's Kitchen, excellent oxtail and run down (fish stew in coconut milk). Had an incredible time at the @belcourPreserves property in Kingston, husband and wife team producing preserves from their farm and host guests with home cooked meals. Robin Lim Lumsden cooked a lunch that was part Jamaican, Chinese, and Indian. Her #desert of coconut panna cotta a O'Tahiti pie was outstanding. When in Kingston, spend a day with them. Chef Christopher Conroy (@stutteringchef) runs a great #barbecue program at the Hermosa Cove hotel -- a must visit if you're near Ocho Rios. And finally, @stushinthebush. One of the best vegetarian meals of my life, and one of the best farm-to-table retreats of my life. Next time you travel to Jamaica, put this at the top of the list. A big thank you to the wonderful and super friendly people of this beautiful Island nation. Will be back.
