'Jasper Hill Farm Cheesecake' with hazelnuts, white chocolate, and cookies by Tickets in Barcelona (2015). Wasn't too excited about it originally because I don't typically care for 'whimsy' in meals but really wanted to try something from Tickets. So glad I did! This thing made the meal and this alone is worth revisiting In Situ. Ridiculously airy 'cheesecake' filling surrounded by a roasty toasty nutty hazelnut paste, served with the most tender melty shortbread cookies. #momentofsilencestatus™
'Guinea Fowl Larp Chiang Mai' from Nahm in Bangkok (1999). One bite in and quickly understand why this dish is served last of the entrees. Bold, seriously spicy, and aggressively seasoned. Served with chilled lettuce, herbs, green beans, cucumbers, tomatoes to offset the heat.
'Liberty Duck Breast' with french green lentils, apples, aged red wine vinegar sauce via The French Laundry (1995). Really well done, delicious duck breast dish. This tasted better than a comparable dish I had *at* The French Laundry.
